Summary
The role of the Kitchen Manager is to manage production leads and production support employees, oversee all aspects of production including all digital logs, maintain daily production flow, and assure all quotas are enforced and goals are met. The Kitchen Manager will understand processes in both kitchen production and packaging. They must be able to supervise packaging and kitchen operations interchangeably. They will be an integral part in the hiring, training, and development of production employees. They will be responsible for setting standards and coordinating functions through clear communication with production staff, while working closely with the Colorado Director to ensure all functions are achieved. Must be able to work a flexible schedule.
You will also be in charge of research and development as we want to continually work on our formulas to develop the best possible cannabis edible we can offer Colorado!
Essential Duties and Responsibilities
· Create monthly Production Planner drafts for approval; adjust as necessary to meet the needs of the business
· Create dosing suggestions for production and submit for approval to Plant Manager/DOO
· Supervise Production employees and assist with planning, assigning, and directing work
· Ensure Production teams understand and execute standard operating procedures, and have ongoing training based on SOP updates
· Oversee scheduling for team members, and delegation of work throughout the day
· Complete Employee Reviews based on company timelines and procedures
· Perform regular coaching to reward positive performance or address deficiencies
· Oversee daily production operations Assist Plant Manager/DOO in planning production and kitchen schedules to fulfill required goals
· Maintain a clean and organized workplace, and ensure Production Support teams understand and follow safety and sanitation procedures
· Collaborates with Plant Manager/DOO in development of SOPs, and implementation of processes
· Maintain and verify inventory of production supplies
· Complete and submit all required reports with accuracy and efficiency
· Maintain high-quality standards during shifts including constant QA/QC of all products being prepped and produced with regard to weights, appearance of product and flavor profile
· Evaluate performance of the operation and make improvements to procedure or work practices to elevate the quality of products
· Perform and monitor all aspects of Quality Control in production
· Ensure accuracy in all kitchen data, counts, measurements and weights
· Ensure compliance with all company policies and state regulations, including health and safety standards
· Ensure proper storage of all facility consumables and products.
· Store food products in compliance with safety practices
· Perform quality inspections on products as assigned.
· Minimize waste where possible Effectively communicate information and respond to questions/suggestions from various levels within the company
· Assist Managers in training and coaching Production Support employees on proper procedures, techniques and compliance protocols
· Communicate quality or safety discrepancies to Managers and/or Directors
· Make recommendations to management regarding personnel evaluation and training of the kitchen team.
· Assist the Plant Manager/DOO as needed Assist with Packaging responsibilities as required

Qualifications
· Previous cannabis industry experience preferred

Summary

JOB SUMMARY

Job Duties and Responsibilities (duties and responsibilities are subject to change due to the needs of the department or organization):
Kitchen:
1. Works alongside the Food Services Manager in maintaining the highest level of nutrition in all meals served.
2. Assists in the planning of menus for all meals at the Village of Hope.
3. Coordinates the daily kitchen work schedule with the Food Services Manager.
4. Supervises assigned Cooks and tastes, smells, and observes food to ensure conformance with recipes and appearance standards.
5. Provides job specific training to staff, volunteers and students as per by the Food Service Manager’s Job Specific Training Program.
6. Assures that food portion controls and quality service to clients as directed by the Food Services Manager.
7. Ensures that staff, volunteers and students following recommended number of servings to be made from any vegetable, meat, beverage, and dessert to control portion costs
8. Oversees the planning, preparation and delivery of contracted catering services.
9. Assists in the planning of all food services, events and catering menus, preparing and apportioning foods, and utilizing food surpluses and leftovers.
10. At the request of the Food Service Manager, meets with professional staff, customers, or client group to resolve menu inconsistencies or to plan menus for special occasions.
11. Willingness to work holidays, weekends and special events.
12. Monitors current inventories of all kitchen supplies and food items available in the facilities and warehouse units.
13. Assists in the purchase of foodstuffs, kitchen supplies, and equipment, or requisitions them from Purchasing Agent.
14. Maintains all supply records and inventories of purchased and donated food items.
15. Works closely with the Food Services Manager as necessary to purchase, acquire and coordinate repairs of all kitchen and dining room equipment.
16. Submit reports to the Food Services Manager of inventory reductions and supply needs.
17. Monitors security for all kitchen supplies.
18. Supervises assigned non-cooking personnel students and volunteers to ensure cleanliness of kitchen and equipment.
19. Maintains a clean food service facility at all times in accordance with Serve Safe requirements.
20. Maintains a safe clean kitchen that complies with County Health Regulations and cooperates with County Health inspectors and follows their requirements.
Volunteer & Training:
21. Coordinates the volunteer calendar with the Volunteer Manager for kitchen/dining volunteers.
22. Supervises volunteer kitchen help during appropriate shift.
23. Oversees the Student Food Services Training Program and reports via email or data base entry to appropriate Case Manager concerning student behavior, job performance, and attendance.
Food Rescue (program on hold currently due to Covid-19):
24. Coordinates and schedules drivers for Grocery Rescue and Starbucks Rescue Routes.
25. Manages and directs all communication with Second Harvest pertaining to Grocery Rescue and Starbucks Rescue Routes.
26. Supervises drivers and direct communication pertaining to routes, timecards, scheduling, performance reviews, organizational concerns, and HR related matters.

Minimum Requirement Qualifications:

· A minimum of 2 years of assisting management or management of a Kitchen or related work environment.

Our ideal Culinary/Kitchen Manager will have several years of experience in a leadership role in a kitchen. Candidates with experience in the marijuana industry are preferred, but this is certainly not required. Summary:
A cannabis operator is seeking a Kitchen Manager for its marijuana production facility located in Las Vegas, Nevada. The Kitchen Manager will oversee production of marijuana edibles and be responsible for hiring, training, and managing kitchen staff. A significant aspect of this position involves administrative duties, such as tracking inventory, following detailed recipes, and creating production schedules. Duties and responsibilities:
· Open, manage, and close kitchen
· Prep, mix, cook, produce, pour, deposit, pull, and store consumable products
· Operate commercial kitchen equipment
· Prepare ingredients, workstations, and kitchen equipment
· Infuse marijuana in food ingredients and ensure blend is adequately emulsified
· Calculate variable dosages
· Comply with state track and trace requirements.
· Assist with interviewing, hiring, and managing staff
· Train staff on kitchen policies and procedures, including food and safety, OSHA, and quality control

REQUIRED EXPERIENCE, EDUCATION AND SKILLS
- Experience in a field and/or operation that adheres to strict health and safety policies and procedures, preferably a regulated field producing products for human consumption.
- Demonstrate a clear understanding of recipes, food production and kitchen sanitation.
- Strong and effective task-management skills and ability to multi-task.
