The Kitchen Lead provides direct support to the Kitchen Associates including training, policies and procedures, and performs their duties in compliance with company policy and food safety guidelines. This position reports to the Kitchen Manager
PRIMARY RESPONSIBILITES
- Follows the production schedule
- Track and weigh all ingredients accurately
- Maintain a clean environment by keeping equipment washed and organized promptly
- Demolding production pieces timely
- Package and label all products accurately
- Operates appropriate machines in order to do job in full ability
- Stock necessary items in and around the site
- Maintain PPE equipment and ensure the availability of equipment
- Maintain a food safe quality environment
- Rejecting products that fail quality standards.

Responsibilities:
- Effectively manage food preparations, production and controls
- Lead the kitchen team with hands on tactics while implementing production processes and schedules; sources high-quality ingredients for a fast-paced, high-end bakery.
- Responsible for hiring assistants, purchasing equipment and building out the operations of the kitchen.
- Trains and oversees staff in producing artisan, high-quality, medically infused products.
- Works with Processing and Packaging to prepare and package products according to the company's internal schedule and within food safety standards and regulations.
- Requires a flawless understanding of food safety standards and professional hygiene.
- Engage in appropriate planning with the Lab Manager so that they can adequately orchestrate timing, the product line mix and the quantity to be made.
- The appropriate use of scales will be necessary to ensure consistency of the cannabis-infused portion of the product and for portion control.
- Ensures that ingredients are ready for use each day.
- QA/QC duties that require analytical testing for quality and consistency.
- Maintaining inventory records of supplies, materials, and equipment.
- Storing supplies and equipment, disposal of waste according to guidelines, and keeping the kitchen working areas immaculate.
- Maintaining material safety data sheets for all department chemicals and products.
- Maintaining highest level of compliance to ensure processing operation is fully compliant with state regulations, federal and state laws.
- Assures that operation adheres to all business and industry license requirements-able to produce documents as proof immediately upon request.
Skills:
- Strong organizational skills are mandatory; required to turn out large quantities of product under tight time constraints.
- Have supervision over the kitchen staff while coordinating schedules with the Lab Manager and Packaging team.
- Excellent math or computer skills to calculate recipes and to product the correct quantity of finished product.
- Health and safety practices and precautions applicable to a kitchen.
- Proper and safe handling and disposal of harmful chemicals, substances, and hazardous wastes.
- Record keeping procedures.
Physical Requirements:
- Must be able to perform repetitive techniques accurately and consistently.
- Must be able to stand for long periods of time, along with frequent bending.
- Close vision (clear vision at 20 inches or less),
- Manual dexterity sufficient to reach/handle items, work with fingers.
- Ability to lift up to 50 pounds and push up to 100 pounds with assistance.
Requirements:
- 3-5 years' experience working in food preparation in restaurant or hospitality environment.
- Previous leadership experience.
- Experience cooking with cannabis preferred.
- Experience grooming kitchen staff for success.
- Ability to multi-task in a fast-paced environment.
- Good organizational skills to create an organized kitchen for the highest level of productivity.
- Excellent planning skills to make the daily operations go smoothly.

JOB REQUIREMENTS
- 2+ years of food manufacturing, distribution, or warehouse experience
- Training of new kitchen associates to ensure the safe operation of kitchen equipment and utensils and the proper handling of heavy items and hazardous materials
- Ensure that production site and finished products meet the company and government standards for quality, sanitation, and safety
- Educate, develop, and motivate kitchen associates to achieve required production results and improving individual technical skills and enabling collaboration

About This Role
The Production Lead helps manage our production team. They are reliable, honest, hardworking, and take pride in the quality of their work. The Production Lead position will be responsible for managing the kitchen production team including but not limited to; crafting quality THC infused edibles, maintaining equipment, maintaining logs, packaging product, training staff, and adhering to all California State Regulations.
Basic Qualifications
Minimum age of 21 years
Able to stand for 8 plus hours
Able to lift and carry at least 50 lbs.
Able to accurately calculate THC content formulations.
Strong organizational skills; attention to detail
Strong attention to detail; able to consistently follow directions, standards and recipes
Food Preparation experience
Ability to implement processes resulting in satisfactory audit practices

Able to work in an environment that may contain strong odors

Must have reliable transportation and be available to travel to various locations if needed

Essential Job Duties and Responsibilities:
Employees must adhere to all operational standards and guidelines, including food quality and
safety, individual and team safety, as well as cleanliness and sanitation.
Follow established SOP’s for cooking all products manufactured in the kitchen.
Must adhere to all Company policies and procedures
Keep assigned areas clean
Assemble, maintain, clean and store cooking equipment for daily business
Lead kitchen team in meeting daily goals
Monitor kitchen team, product prep and cook times, as well as temperatures to ensure consistency
Help recruit and train employees in designated stations
Keeping recipes and SOP’s for cooking updated
Oversee the completion of all required record keeping including but not limited to food logs, waste sheets, and cleaning logs
Label everything according to the batch ticket assigned
Successfully complete applicable shift responsibilities and other duties as assigned by the manager on duty
Communicate with and treat others respectfully at all times
