OPPORTUNITY
I have secured under my luxury foods brand - 3Saffron - a four day engagement to present three world class, cannabis infused menus to a total of 360 guests over 4th of July weekend. Events will be held outdoors at a luxury beach house in Seaside Heights, NJ and sponsored by a major cannabis brand.
I will be presenting brunch, dinner and midnight party menus to 30 diners per turn over four days. Menus are final, processes are set and calendars are made. I am looking for a sous chef and cook who can handle an intense day of preparation and four days of precise execution.
I have more of these planned over the summer and am now looking at Fall opportunities. The person who crushes this first gig will have a long-term opportunity to make real money.
RESPONSIBILITIES
1. Take my instructions - I am a soloist looking for reliable professionals who will support my vision.. I have a specific method for every aspect of all executions. I am easy to work with - but I am not looking for collaboration partners. I need people who can implement.
2. Work a station - I have every detail calculated over the five days. The plan calls for a sous chef and cook to work a station during service. I need someone who can rotate through stations as we progress through courses.
3. Adapt under pressure - These will be an intense five days. The right person will be able to think their feet and help me to solve problems in real time. I need someone who can learn my style quickly and complement it immediately.

We are looking for a professional Sous Chef to be the second in command in our kitchen, following our Executive Chef’s specifications and guidelines creating fresh, flavorful dishes from scratch in our casual farm-to-table restaurant and helping to develop cannabis menus and products.
We are also a busy event/music venue that has a great local following. The menu and overall theme have recently underwent an overhaul with an eclectic menu with a global street food theme and farm to table focus. We work with many local farmers who provide us with their specialty products.

Kitchen Sous Chef
Responsibilities
This role is a Production Sous Chef position within the manufacturing of Cannabis- Infused edibles.
The Production Sous Chef will be responsible for the day to day running of the kitchen. They will follow and aid in the creation of all standardized SOP’s, batch sheets, and GMP’s (good manufacturing process), training manuals and all safety-sanitation standards. The Production Sous Chef will work with the Production Manager on all inventory demands, including but not limited to ingredients, equipment, tools, and product order demands. This position will work closely with the Production Manager in the setting up and/or the creation of the new edible kitchen facility.
QualificationsMust be able to work with manual to semi-automatic manufacturing and packaging machines, wet and dry weighing/scaling of ingredients, equipment, agitators, dispensers, packaging and labeling to produce a wide variety of NABIS products. Must be able to communicate effectively with management and co-workers.
Familiar with commercial kitchen equipment including mixers, ovens, double-boiler/fire mixers, confectionary heating/cooling tables and other bakery/chocolatier equipment to produce, package and label infused edibles. Perform weigh and dispense activities of finished product, active ingredient(s), and raw materials.
- Document all manufacturing activities consistent with Good Manufacturing Practices.
- Maintain manufacturing and facility spaces in a clean state.
- Maintain room and equipment logbooks.
- Observe, monitor & record temperature, pressure and other parameters on Manufacturing processes and equipment.
- Maintain a safe work environment.
- Perform minor equipment and process maintenance activities.
- Communicate daily and effectively with the Edible Production Manager, Supervisor, and Director of Operations.
- The ability to stand and move for at least 8 hours in a row
- The ability to pick up and carry 50 lbs.
- Other duties as assigned.
Requirements
- Ability to perform general mathematical calculations including addition, subtraction, multiplication, and division.
- Attention to detail in all aspects of job responsibilities, including but not limited to good documentation practices, strict adherence to Standard Operating Procedure and Manufacturing Batch Record instructions, equipment and area hygiene and safety, GMP gowning requirements adherence PPE, (personal protective equipment), release versus quarantine status of all manufacturing materials, general labeling requirements.
- Accurately and precisely operate laboratory scales and other simple but precision measurement devices.
- Regular and on-time attendance is mandated and is an essential function of this position.
- Working knowledge of local, state, and company safety regulations and procedures
- Must be able to obtain a AZ Dispensary Agent card with proof of US citizenship and pass required background checks. Must have an active state food handlers card

- Each employee will have a valid State Food Handler’s card.
