Job Description: The Head Candy Maker is responsible for all aspects of Candy operations, including the selection of equipment, creation of candy recipes, setting and maintaining standards for product development, and adherence to health department regulations.
Prepare gummy ingredients by following, modifying, or formulating recipes to produce products of specified flavor, texture, and color. Develop, implement, and maintain Good Manufacturing Practices (GMPs) and ensure that ingredients, products, and packaging materials are handled safely and that food products are processed in a suitable environment. Develop, prepare, and maintain a Food Safety Plan, a Food Recall Plan implementing lot codes, and develop Standard Operating Procedures (SOPs) for tracing lot codes to sales locations. Set up, operate, maintain, and clean candy-making equipment. Provide input and data needed for product labeling as required by the Illinois Department of Public Health and the Federal Food and Drug Administration.

Job Specifications
- Experience formulating and producing gummy candies
- Minimum of 2 years experience in a supervisory role at a bakery, candy making operation, or other similar food batch-making position requiring precision, attention to detail, and accountability for GMP.
- Ability to perform basic arithmetic as well as understand, implement, and apply both metric and standard measurements and conversions.
- Hold a current Food Safety Manager Certification with a scaled test score of 92 or above.
- Ability to read, write and speak English.
- Ability to distinguish between sweet, sour, and bitter, to stand for extended periods, and the ability to lift up to 40 lbs.
- High School Diploma/GED or equivalent experience
- Proven track record of creating, developing and executing recipes and operational processes and procedures.
- Ability to use a variety of candy-making equipment and small hand tools and utensils.
- Ability to effectively give and receive feedback and supervision required.
- Ability to maintain confidentiality, work independently and respond to changing priorities proficiently.
- Demonstrated high level of organizational, interpersonal, and oral communication skills required.
- Ability to communicate and work effectively, collaboratively, and maintain a high level of professionalism with applicants, associates, contractors, vendors and guests.
- Ability to work with little or no direct supervision.

We are a fully licensed Cannabis Manufacturing Facility looking for an Immediate Full-time Confectionery Cooker to lead our new candy line!
*The ideal candidate should have at least 2 years of industrial cooking or confectionary experience with a passion for confections and/or cannabis. Candidate must be self motivated, and a conscious-cooker! Cook will primarily work in a food grade cleanroom environment to produce candy for further processing and lead a small crew in overall batch making.**Available Shifts: This is a lead position, candidate must be flexible to work 8 hour shifts between the hours of 6am - 10pm, M - F according to production timelines.**Key Responsibilities:
- Contributes to efficient production of candy through quality, safety, and good manufacturing processes by overseeing the production of candy from the drum to wrap.
- Operates equipment such as large mixers, burners, kettles, large pots, in a safe and proficient manner.
- Measure or weigh ingredients, using scales or measuring containers
- Mixes and cooks candies in batches per client standards.
- Reads and understands formulas/recipes, measurements, and thermometers.
- Understands product specifications established by clients and recognizes deviations from those specifications.
- Assist in the production of products by working with a small team, keeping quality and safety at the forefront.
- Record production and test data, such as processing steps, temps, cooking time, batches processed, and test results
- Collect and examine product samples during production to test them for quality, color, content, consistency, viscosity, etc.
- Notifies supervisor of any problems or issues.
- Interact with Management and maintenance personnel to monitor and improve performance of equipment.
- Operates at desired production rate.
- Requires repeated lifting of at least 25 lbs, and ability to lift up to 50 lbs with two hands.
- Performs clean-up activities as assigned.
