Head Chef / Pit Master

This chef will be responsible for building out the team, finalizing the menu and recipes, and opening Stowe Cider’s kitchen to the public later this fall. Join a team that puts an emphasis on fun, quality and work-life balance.
Responsibilities
- Hire, train and supervise all kitchen staff
- Create a repeatable process and produce consistent, high-quality food
- Develop specials and seasonal recipes
- Oversee and manage inventories
- Source food, build vendor relationships and place orders
- Plan and direct food preparation, execution and clean up to the appropriate team members
- Oversee and support the maintenance and repair of kitchen appliances
- Manage food and labor costs
- Work efficiently to resolve any problems that arise in the kitchen
- Maintain a clean and organized kitchen while following all state food safety and sanitation laws
- Keep up with cooking trends and best practices
- Develop and oversee the smoker operations utilizing an Ole Hickory smoker
Unique Opportunities
- Lead the efforts to start a brand new kitchen and food experience at Stowe Cider
- Help build your own team from scratch
- Cook for a variety of unique and fun events: concerts, welcome dinners, cannabis showcases, cider pairing dinners, bachelor/bachelorette parties and more
- Develop and execute a catering program for off-site events
- Work in a non-traditional kitchen environment while still making a focus of delicious, high-quality food
Skills

Head Chef responsibilities include:
- Controlling and directing the food preparation process and any other relative activities.
- Constructing menus with new or existing culinary creations ensuring the variety and quality of the servings.
- Approving and “polishing” orders before they reach the customer.
- Direct monthly inventory and plan orders of equipment or ingredients according to identified shortages.
- Arrange for repairs when necessary.
- Comply with nutrition and sanitation regulations and safety standards.
- Make sure that all kitchen and wait staff adhere to food safety and hygiene regulations to ensure a clean and sanitary kitchen.
- Collaborate with the general manager to align kitchen operations with the overarching goals of the establishment.
- Assist with competitive and community research to improve the quality of menu, food, and atmosphere.
Requirements:
- Minimum 3 years experience as Head Chef.
- Experience with international cuisine, organic produce, vegan/vegetarian menus.
- Credentials in health and safety training: ServSafe.
