Tempeh is a traditionally fermented plant-based protein source that originated in Indonesia, made from mold cultured beans.
Summary of Position:
- Involved with all aspects of tempeh production, from cracking and cooking beans, to monitoring fermentation during the incubation process, (It is a delicate and often temperamental culture that requires a healthy blend of science and art)
- Involved with all aspects of making and packaging all existing tempeh product lines(retail and food service). This includes making marinades, seasoning blends, as well as packaging final products into retail pouches.
- Research and Development: Evaluate and Improve all areas of production, as well as help create new product lines. Preference will be given to candidates interested and capable of experimenting with different areas of fermentation, especially with koji culture.(For miso, soy sauce and many other applications)
- Maintaining equipment, and a clean and organized workspace
- Understand that much of this work is self led, with some shared tasks.

The Brinery is a 12 year old local food production company in Ann Arbor. We nourish people with traditionally fermented foods, and our products are available in 600+ stores and restaurants throughout Michigan, and the Midwest. We are honored to be part of our local food community, and are located at The Washtenaw Food Hub, a solar powered shared use facility.
WHO YOU ARE:
(No worries if you don’t check all of these. Relevant experience is preferred, but a good cultural fit, and a strong desire to learn and improve is equally as important.)
You have a scientific/and or comercial kitchen background. You have experience with fermentation, temperature and humidity control (including setting up and maintaining equipment), following strict recipes, data tracking and managing outcomes. You have professional kitchen or baking experience. You have experience in some or all of the following: making tempeh, fermenting, greenhouse management, mushroom/cannabis cultivation, or something else along these lines.
You are a problem solver. You are a tinker-er by nature and enjoy understanding how systems and equipment work.
You are entrepreneurial in nature. You’re an overall hard worker who enjoys finding creative solutions and making them happen. You understand what it means to work for a small business and are energized by the idea of wearing multiple hats and taking ownership of a project. You have excellent communication skills and enjoy working in small teams as well as independently.
HOURS: Full-Time (40 hours/week). Shifts are Sunday-Thursday, 8am-4pm. Sunday availability is a must
COMPENSATION: Starting $17/hour
EXPECTATIONS:
- Lift up to 50# multiple times per day.
- Ability to stand on your feet for up to 8 hours/day.
- Comfortable working in a kitchen environment. Part of your job will be to operate the
60-gallon steam kettle in which we cook our beans.
- Comfortable using knives or other slicing/shredding machines that are used in production.
- Exceptional attention to detail during all tasks (e.g. keeping a watchful eye on fermentation temperatures, quality control of finished product, proper sanitation of workspace and prep areas, diligent tracking of data and upkeep of documentation).
- Take responsibility and pride in your work.
- Respect for shared space: As an anchor tenant of the Washtenaw Food Hub, we expect that all Brinery employees respect and maintain shared use spaces (the kitchens we use to cook our beans, the sinks we wash our dishes in) and introduce yourself to anyone that you might not already know.
- Time management of tasks and projects, ensuring that all are completed efficiently.
- Maintain regular production and packaging data tracking.
- Maintain open, frequent, and productive communication. Offer advice, ideas and constructive feedback to the team to help ensure continual improvement in all aspects of production.
- Maintain and update Standard Operating Procedures (SOPs) for production processes such as food safety guidelines, production manuals and equipment care and usage.
- Maintain a clean and organized work area. This includes dishwashing, mopping, etc.
- Manage and participate in all daily aspects of production – from receiving delivery of ingredients to cleanup at the end of the production day, with particular attention to time management, process flow, and efficiency
